Coffee was introduced to Nicaragua in the late 18th century, but it wasn’t until the mid-1800s that it took off as a commercial crop. By the early 20th century, coffee had become one of the country’s primary exports, particularly from the highland regions of Matagalpa, Jinotega, and Nueva Segovia.

Growing Coffee in Molino Norte, Matagalpa
Our Nicaraguan coffee comes from Molino Norte in the lush hills of Matagalpa—a region blessed with clay mineral-rich soil, frequent rainfall, and elevations between 900 and 1,590 meters. These highlands create a cooler microclimate, allowing coffee cherries to ripen slowly and develop more complex flavors.
The coffee is grown by smallholder farmers, who cultivate varietals like Yellow and Red Catuai, Catimor, and Parainema. After careful harvesting, the beans are fully washed, fermented for 12–14 hours, and then dried on patios and raised beds—a process that preserves clarity and adds a honeyed sweetness to the cup.
